The Bank of Cyprus Cultural Foundation, honoring Cypriot tradition and within the framework of the study and research of intangible cultural heritage, and especially tradition, continues this annual tribute with activities and events that showcase Cypriot tradition through the Foundation's collections and museums.
Continuing the successful collaboration between the Foundation and its distinguished collaborator Florentia Kythreotou, we are launching the workshops series for 2026 and invite you to the first workshop for adults dedicated to Clean Monday dishes.
Unique and creative recipes based on high-quality Cypriot ingredients will be presented, highlighting the "rich arsenal" of fasting through fresh ideas, pure flavors, and simple techniques.
The workshop will include a short presentation on "Lent in Cypriot culinary tradition." It will also highlight the cultural dimension of our diet, which is organized not so much by the production cycle of products as by the alternation of fasting and feasting defined by the Eastern Orthodox Church.
The workshop will offer practical suggestions for flavor combinations and the use of seasonal and local ingredients (legumes, tahini, carob syrup, olives, greens, citrus fruits, flowers, nuts, etc.) so that the fasting table is both authentic and creative.
Florentia Kythreotou is a writer and wine and gastronomy educator with a wealth of writing and extensive experience in the fields of food, culture and education. She holds the international WSET Level 3 (Wine & Spirit Education Trust) qualification and is a certified trainer by the Human Resources Development Authority (HRD).
